2019 Domaine Mosnier Chablis AC ‘Terre et Secret’ (100% organic, vegan)
GRAPE : 100% Chardonnay
TERROIR : Kimmeridgian : Limestone soil, alternating layers of very compact limestone and very soft clay marls containing fossilized marine organisms (tiny oysters, called Exogyra virgula).
This Cuvée goes through extensive aging starting in stainless steel tanks for 1 year and finished in amphora for 3 months
Harvested in October, Bottled at the end of July in the following year.
TASTING : Light and shiny gold color, Generous nose with toasted almond and lot of flower notes. Gourmet and generous attack, finishing with long lingering minerality.
